2 large eggs
1 tsp ground cinnamon
8 slices of thick white bread
Butter for frying
Toppings of your choice (we love blueberries, banana, and a good drizzle of golden syrup)
All quantities can be doubled or halved, depending how many people you are serving.
1. In a wide, flat dish, beat the eggs, milk, and ground cinnamon together. Coat one side of each slice in the mixture, before flipping them and leaving to soak for around 2 minutes. If your bread isn’t super fresh, you can soak it for a little longer, but no more than 3-4 minutes, or your bread might start to fall apart.
2. Melt a large knob of butter in a large, non-stick frying pan over a medium heat, and add in 2 slices of the soaked bread. Cook for 5 minutes, or until golden, then flip the bread to the other side, and cook for a further 5 minutes.
3. Repeat the above process until all the slices are cooked, adding another knob of butter to the pan each time.
4. Once cooked, transfer your French toast to a plate, and add your toppings. Our favourites are blueberries, banana, and golden syrup, but you can use anything you like, including strawberries, whipped cream, bacon, or ricotta cheese.
